I\u2019m not talking the cheap and nasty stuff packed full of sugars but my favourite made by &#8216;Meridian&#8217;, the crunchy stuff winning hands down. So, if like me you add a little toast to your peanut butter in the mornings this is something special! \u00a0<\/p>\n\n\n\n<p>Makes 8 (No surprises I like to double up). <\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>1 tbsp coconut oil <\/p>\n\n\n\n<p>1 400g tin of chickpeas (drained and rinsed) \u2013 high in fibre and\nprotein <\/p>\n\n\n\n<p>125g x crunchy peanut butter (the higher quality the better) <\/p>\n\n\n\n<p>4 tbsp milk or water <\/p>\n\n\n\n<p>2 tsp vanilla extract <\/p>\n\n\n\n<p>100ml honey<\/p>\n\n\n\n<p>\u00bd tsp sea salt <\/p>\n\n\n\n<p>\u00bd tsp baking powder <\/p>\n\n\n\n<p>\u00bc bicarbonate of soda <\/p>\n\n\n\n<p>50g dark chocolate, roughly chopped <\/p>\n\n\n\n<p>1 tbsp coco powder<\/p>\n\n\n\n<p><strong>How to<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 200 degrees. Grease a shallow\nsquare\/ round baking tin&nbsp; <\/li><li>Place\neverything but the dark chocolate into the food processer. Whizz until smooth<\/li><li>Pour\nmixture into tin<\/li><li>Melt\ndark chocolate over a pan of boiling water, drizzle half over the mixture and\nswirl the remaining chocolate through the mixture with a knife<\/li><li>Bake\nfor approx. 18 minutes. Cool for 15 minutes then turn onto a wire rack. Leave\nto cool completely <\/li><li>Store in an airtight container in the fridge for\nup to a week\u2026if they last that long! <\/li><\/ol>\n\n\n\n<p>Tried it?
