Prep time 10 minutes<\/p>\n

Baking Time 20 minutes<\/p>\n

Makes 20 slices<\/p>\n

I\u2019m always on the hunt for new healthier options to satisfy my sweet tooth.\u00a0 I played around with the ingredients a little depending on what I had in the cupboards. A \u2018quick\u2019 trip to the supermarket is a thing of the past with an 18-month-old!<\/p>\n

Ingredients<\/u><\/strong><\/p>\n

1 \u00bd cups wholemeal self-raising flour<\/p>\n

1 \u00bd cups oats<\/p>\n

\u2153 cup coconut sugar. I didn\u2019t have this & the result was tasty without.<\/p>\n

Pinch of salt<\/p>\n

\u2154 cup melted coconut oil<\/p>\n

1 large beaten egg<\/p>\n

3 tbsp local honey<\/p>\n

\u2154 cup shredded coconut<\/p>\n

1 tbsp raspberry jam or preserve of choice<\/p>\n

 <\/p>\n

How to<\/u><\/strong><\/p>\n

    \n
  1. Add ingredients into a bowl but leaving the jam to one side<\/li>\n
  2. Put 2\/3 of the mixture onto a lined baking tray and press down firmly<\/li>\n
  3. Spread with a thin layer of raspberry jam<\/li>\n
  4. Pour evenly over the remaining mixture and press down firmly.<\/li>\n
  5. Bake in a preheated oven at 180 degrees for 20 minutes until golden<\/li>\n
  6. Leave to cool then slice<\/li>\n<\/ol>\n
